Ingredients
1 pound ground elk meat
ground beef
2
zucchini
peeled and diced
2
bell peppers
diced
1
onion
peeled and diced
1
8 ounce can tomato sauce
1
14.5 ounce can fire-roasted tomatoes
1 1/2
tablespoons
chili powder
2
teaspoons
cumin
1
teaspoon
garlic powder
1
teaspoon
cayenne
leave out if you want mild
1
teaspoon
oregano
1
teaspoon
sea salt
1
teaspoon
black pepper
1
cinnamon stick
Instructions
Stovetop
Preheat a
dutch oven
or
large stock pot
over medium heat
Add in a cooking fat of your choice, like always we used 3 tablespoons of bacon fat
Add in your onions and sweat them for about 10 minutes or until translucent
Add in your peppers and zucchini and sauté for another 5 minutes
Stir in your ground elk meat and all the spices and mix well, stir every minute or so for 7-9 minutes until your elk is cooked
Add your tomato sauce, fire-roasted tomatoes, and cinnamon stick and stir well
Reduce heat to low, cover and let simmer for at least 45 minutes
Serve hot and enjoy
Crockpot
Combine all the above ingredients in your
crock pot
and mix well
Turn on low and let cook for 8 hours
Serve and enjoy
