Caveman Chili and Rice

Ingredients
  

Caveman Chili
  • 2 medium yellow onions chopped
  • 4 cloves garlic minced
  • 2 green bell peppers chopped
  • 2 pounds ground chuck beef
  • 14 ounces tomatoes canned, drained, chopped
  • 4 ounces green chilies canned, chopped
  • 2 teaspoons ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon cayenne pepper
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • 1 cup beef or chicken broth
Cauliflower Rice
  • 1 head of cauliflower cut into florets

Method
 

Caveman Chili
  1. In a saute pan, saute the onions, peppers, and garlic until they start to become soft
  2. Next add in the ground beef and cook until brown, then drain off the excess fat
  3. Transfer the meat and vegetables to your crock pot
  4. Add all the remaining ingredients and mix well
  5. Cover and cook on low for 6 hours
  6. Enjoy and serve over a bed of cauliflower rice
Cauliflower Rice
  1. Place all of your cauliflower florets into your food processor and blend down until you get the texture and consistency of rice
  2. Transfer to a microwaveable safe dish and cover, DO NOT ADD WATER
  3. Microwave on high for 5 minutes, remove from microwave, add some salt, pepper, and garlic to taste and serve
  4. Enjoy
