Preheat oven to 400 degrees farenheit
Whisk eggs, melted coconut oil, coconut milk together in a mixing bowl
Sift together the coconut flour, baking powder, and salt
Add the dry ingredients to the wet
I used my food processor to dice the fruit (don't overdue it, you don't want a paste)
Add the fruit to the batter
Spread evenly between 12 muffin tins
Bake for 20-25 minutes or until done
