Bison Paleo Chili

Ingredients
  

  • 1 pound grass fed ground bison
  • 2 tablespoons of ghee
  • 1 large sweet potato/yam or 2 medium - peeled and cut into 1/2" cubes
  • 1 onion - chopped
  • 1 14 ounce can roasted tomatoes
  • 1 14 ounce can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons minced garlic
  • 2 bay leafs
  • 2 tablespoons chili powder
  • 2 teaspoons salt
  • 1/2 teaspoon or more pepper
  • 2 teaspoons cumin
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon cayenne
  • 1-1/2 cup beef or chicken broth
  • Handful of cilantro for garnish

Instructions
 

  • Add 2 tablespoons of ghee to a pan and brown the bison (cook bison low and slow, it generally cooks more on the rare side)
  • Add the cooked bison and the remaining ingredients to the crockpot
  • Cover and cook on low for 6-8 hours
  • Dish yourself up a bowl and sprinkle with cilantro or red onions or maybe a squirt of lemon!
