Line the bottom of your crockpot with your onions, celery, and carrots Heat a saute pan or cast iron skillet over high heat and sear all sides of your short ribs for 2-3 minutes per side
Place your short ribs on top of your veggies
Mix all other ingredients in a bowl and pour over the top of your short ribs
Cover your crock pot and cook on low for 8 hours
After it is cooked, if you would like you can remove the veggies and beef and add some arrowroot powder to thicken the sauce and serve over your beef
